Ingredients:
- 1 dash Tarragon Cocktail Spice
- 1 oz 6% Mango Cordial*
- ½ oz Dry Vermouth
- 1 ½ oz Sheringham Seaside Gin
- 2 oz Soda Water
Method:
Build all ingredients in a Collins glass over ice reserving the soda for last. Add soda down a ribbed bar spoon, stir three times and garnish with a lime wheel and green barber straw.
*Mango Cordial recipe:
- 5 oz Mango Juice
- 150g White Sugar
- 18g Citric Acid Powder
Method:
Add all ingredients reserving the citric acid for last into a small saucepan. Homogenize sugar and mango juice. Add 6 % citric acid. Fine strain and store in a food safe container.
