Seaside Gin

Cocktail Ingredients:
- 2 oz Arbutus infused Sheringham Seaside Gin*
- .75 oz Fresh Lime Juice
- .5 oz Simple Syrup
- .5 oz Kina Blanc
- 2 Thyme Sprigs
*Arbutus infused Seaside gin method:
Infuse 30 grams of Arbutus tree bark in 1 cup of Sheringham Seaside Gin. Let sit for 24 hours and fine strain to remove the small pieces of bark.
Cocktail Method:
Add all ingredients, including thyme sprigs in your shaker tin, and shake until chilled. Double strain into a Rocks glass with one big ice cube. Garnish with a piece of Arbutus bark.
